Strawberry Arugula Salad – Loaded Spring Salad with Berries and Lemon

Nothing rings in Springtime like strawberries, fennel and arugula. I originally created this strawberry arugula salad for my cookbook, Simple Green Meals, and it is definitely a favorite.

While this salad recipe may contain a few plants you aren’t familiar with, give it a try! These were new to me at one time too, and I got to discover just how incredible they are. Trust me.

Strawberry Arugula Salad Recipe

For an extra creamy dressing, combine all dressing ingredients (except for the poppy seeds!) in a blender or food processor. Blend until creamy. You may need to add a bit of water to help it blend well. Hand mix in the poppy seeds, then store in the fridge until ready to serve.

Slice the fennel bulb, Meyer lemon, strawberries, almonds and orange, then toss with the arugula and berries. Once you’re ready to eat, shake up that homemade vinaigrette and pour over the salad.

I won’t judge if you lick the bowl on this one. It’s ridiculously good. I love Meyer lemons so much I started growing them in my yard and eating them like apples. If this is your first time trying one then I dare you not to immediately fall in love :-).

Easy Ingredient Swaps

While Meyer lemons are definitely preferred (they have the best flavor) in this strawberry arugula salad, you *can* swap them out for regular lemons. Just know they will be tarter and smaller. You can swap fennel for white onions as well as the berries for any berries you have on hand.

If you need this salad to be nut-freethen swap the almonds with hemp hearts or sunflower seeds, and swap the cashews in the lemon vinaigrette with the same.

Ingredients

  • 4 cups arugula
  • ½ fennel bulb (very thinly sliced)
  • 1 orange (peeled and segmented)
  • ½ cup strawberries (sliced)
  • ½ cup blueberries
  • ½ cup raspberries
  • ½ Mayer lemon (seeded and very thinly sliced)
  • ¼ cup sliced ​​almonds

Meyer Lemon Vinaigrette

  • 2 . cashews (soaked for 1 to 4 hours)
  • 2 . Mayer lemon (juiced)
  • 1.5 test honey
  • ¼ test sea ​​salt
  • dash ground black pepper
  • 2 . olive oil
  • 1.5 test poppy seeds

Instructions

  • Combine the cashews, lemon juice, honey, salt and pepper in a blender or food processor and puree until smooth. Add a teaspoon of water if needed. Mix in poppy seeds and set aside.

  • In a separate bowl, combine the arugula, fennel, oranges, berries, lemon and almonds.

  • When ready to serve, drizzle dressing on top.

  • Store dressing in a jar with a tight-fitting lid and keep in the refrigerator for up to 1 week.
  • Swap in whatever berries you have on hand.
  • Hemp hearts or sunflower seeds can be swapped in for almonds in the salad and for the cashews in the dressing.
  • Meyer lemons are less tart and much sweeter (and larger) than regular lemons. You can swap in regular lemons if you can’t find Meyer lemons, yet it will change the flavor of the salad and vinaigrette.

This mojito mocktail recipe is sweet and refreshing, making it an excellent choice for spring or summer.This virgin strawberry mojito is just as fun to make as it is to drink. Its:

  • Easy: With easy to find ingredients and a few simple tools, you’ll have your mojito mocktail in hand in no time!
  • healthy: fibre packed strawberries and vitamin C packed limes, this delicious drink s not just refreshing but good for you too!
  • Low in sugar: strawberries are the primary source of the sweetness of this mocktail. Use an all-natural, zero-carb sweetener such as monk fruit sweetener for a lower sugar and carb option. Note: you can use regular sugar or another sweetener if you prefer; just be mindful of the sugar content.

WHAT IS A TRADITIONAL MOJITO COCKTAIL, AND HOW IS A MOJITO MOCKTAIL DIFFERENT?

Traditionally, a mojito cocktail is made of white rum, lime juice, mint and sugar. The mint and lime are muddled with sugar to release the juice and flavours. Then, ice is added with rum and soda water.

This virgin strawberry mojito mocktail recipe is inspired by the original but omits the rum and uses healthier sugar alternatives. Strawberries, fresh mint, and lime juice are muddled together for a vibrant variation.

EQUIPMENT YOU’LL NEED

  • Glasses: Mojitos are traditionally served in a highball glass. If you don’t have them, don’t stress. The vibrant combination of strawberry, mint and lime mean your virgin strawberry mojito will look beautiful in any type of glass.
  • A muddler: that’s perfect if you have a normal muddler! If not, the back of a wooden spoon works too.
  • Pitcher or jug: just increase the quantities and muddle inside a jug if you want to make this for a crowd. To save time, pre-muddle the ingredients in the jug and simply add the soda water and ice when you’re ready to serve.

INGREDIENTS

Strawberries: Fresh, in-season strawberries are my pick for this recipe. If they’re unavailable, frozen strawberries work just as well. Make sure to taw them before adding.

When you muddle the strawberries, try and get the strawberry pieces small enough to fit through a straw. You can use a blender if preferred.

Fresh mint: the menthol aromatics of fresh mint make this recipe pop. Don’t shred or chop it. Clapping it together in your hands and then gently muddling it is the secret to making the most of its flavour.

Lime juice: fresh lime juice is essential for this recipe. Avoid bottled if you can, it doesn’t deliver quite the same flavour.

Hint: Freeze fresh lime juice in ice cube trays to make the most of your limes.

Sweetener of choice: Simple syrup is the traditional choice for mojitos. My easy version swaps the syrup out for sugar. For a low sugar option, replace the sugar with a sweetener of your choice.

Soda water: plain club soda creates a fresh fizz however you can use the sparkling water of your choice.

VARIATIONS

For a citrusy tang, replace the plain soda with lime flavored soda water. Opt for a low or no sugar version. Kombucha is a naturally sweet replacement for soda water. Experiment with plain or flavored varieties until you find the perfect combination.

For a low sugar option, simply swap the sugar out with monkfruit sweetener to enjoy a refined sugar-free strawberry mojito mocktail. You can also use another sweetener of your choice but be sure to read the packet for any conversions.

HOW TO MAKE A VIRGIN STRAWBERRY MOJITO

Muddle strawberries and sugar (or monkfruit sweetener) in a glass to release the juices. Try and get the strawberry pieces small enough that they will fit through a straw. Use a blender in this step if preferred.

Add the lime juice and stir to combine.

Clap the mint together in your hands. You’ll know it’s worked when your hands smell minty! Then, add to the glass and muddle very gently a couple of times.

Fill the glass with ice and soda water. Garnish with extra strawberries, mint and lime.

Fresh strawberries: There’s nothing better than fresh strawberries straight from the punnet. If you can only get your hands on frozen strawberries, always thaw them before adding.

Slice your strawberries before macerating them in the sugar water mixture for a sweet and smooth result.

Sugar, or monkfruit sweetener: maceration (soaking fruit in sugar water) is essential to soften the strawberries. It will turn even less than perfect berries into something worthy of your fresca.

  • Green Tea – Green Tea or black tea both works for this recipe. And I have used tea bags, you can also use powder if that’s handy
  • Instant Boba Pearls – There are verities of Boba available in the market, feel free to use your favorite ones. Here I have used black sugar Boba pearls and it cooks in under 10 minutes
  • Brown Sugar – I have used minimal amount of brown sugar here, since my Boba and strawberry milk already have a good amount of sugar in it

How to make Strawberry Milk Bubble Tea?

The recipe I have shared here is a homemade Strawberry Milk Bubble Tea and I have used green tea and homemade Strawberry Milk to make this Boba tea. But you can also use store brought strawberry milk to make this drink.

Following are the high-level instructions to make this drink but for detailed step-by-step instructions with photo and video, please check out the recipe card below.

  • Bring water to boil – In a saucepan with medium heat, pour water and bring it to boil
  • Add the boba pearls – Now add the black boba pearls and allow them to cook for 3 to 5 minutes
  • Cook the boba – Close the lid of the pan and simmer the heat. And cook the boba pearls until it doubles in it size
  • Drain the boba – Open the lid and remove the boba pearls from water and reserve them for later use
  • Brew the green tea – Now in a saucepan, pour water and add green tea bags. Close the lid and allow it to brew for 3 to 5 minutes. Remove it from heat and allow it to cool down to room temperature
  • Make Strawberry Milk Tea Now in a serving glass, add the cooked boba pearls, sugar, green tea, and strawberry milk and give it a mix. Now the delicious and chewy tea is ready for you to try and enjoy.
  • Serve – Serve this refreshing drink warm on cold winter days or iced on hot summer days
