Healthy Pasta Salad – Easy Lunch Recipe to Enjoy All Year Round

I have a hard time eating leftovers for lunch every day. Instead, I’m always on the hunt for easy yet tasty lunches that don’t take much prep work. I know that sounds like a unicorn, but it’s not! My healthy pasta salad checks all the boxes (and has a good amount of protein as well). Feel free to keep it a vegan pasta salad with the vegan feta or toss in your favorite cheese if you can tolerate it.

I set out to create this healthy pasta salad after Rawkstar Jennifer told me she was looking for quick and healthy recipes that her high schooler could take to school. I love how the different flavors mix in this recipe without meat or dairy.

Healthy Pasta Salad Recipe

Follow cooking directions on pasta package, allowing pasta to remain slightly undercooked. This will help keep the pasta from falling apart in the salad. Drain and rinse with cold water until pasta is completely cool, then drain well again.

While the pasta is cooling, mix all the Basic Vinaigrette ingredients together in a bowl until combined.

Place cooled pasta into a large bowl and add the vegetables and herbs. Gentle toss. Drizzle Basic Vinaigrette over the pasta salad and gently toss again. Cover and refrigerate until ready to serve.

If meal prepping, transfer the salad to airtight containers and store it in the refrigerator until ready to use.

While I created this healthy pasta salad with lunch in mind, it works great as a shareable side at a potluck or family meal as well.

Tips and Tricks to the Best Pasta Salad

Toss the salad well in the dressing as this helps it keep well in the fridge. Store in individual serving airtight containers to grab when you need to quickly. If you like your greens extra fresh, then wait to add those until you’re ready to eat, so they don’t wilt.

Probably my favorite part about this healthy pasta salad lunch is how much you can customize it to your taste preferences! Here are a few swaps I suggest if you want to try them:

Swap olive oil with avocado oil.

Swap red wine vinegar with the vinegar of your choice.

Use your preferred pasta type, or use gluten-free.

Cannellini beans can be swapped with another kind of legume (black beans, kidney beans or chickpeas are great swaps).

Add the veggies of your choice! Radisses or cucumbers are great additions.

Feel free to add nuts or seeds for an extra crunch.

I have a hard time eating the same thing over again, even when it’s as delicious as this vegan pasta salad. So you’ll find mine with a slight variation every time I make it, and that’s totally fine.

Basic Vinaigrette

  • ½ cup extra virgin olive oil
  • ¼ cup red wine vinegar (or vinegar of choice)
  • 1 . maple syrup
  • 2 test Dijon mustard
  • 1 clove garlic (finely minced)

Being an Indian, we make our yogurt, buttermilk, butter, and ghee at home in the traditional way. So here I have shared how to make Buttermilk using yogurt for instant consumption and its Substitute to use in cooking especially in baking if the fresh drink is not handy to you.

The ingredients you will need to make this Buttermilk and the Substitute are simple. It is just 2 ingredients that help to make an easy drink or to make your baking goodies soft, fluffy and airy.

For Buttermilk

  • Full Fat Yogurt – Full fat yogurt are thick cultured milk that are basically acidic. You can also directly use yogurt in baking if the recipe calls for buttermilk. And here I have thinned it down for drinking purpose
  • Water – Filtered water to thin out the yogurt.

For Buttermilk Substitute

  • Whole Milk – I have used full fat milk but you can also substitute it with coconut milk, soy milk, oatmilk, almond milk or any other kind of vegan milk
  • Lemon Juice or Vinegar – You can use either lemon juice or vinegar to curdle the milk

  • In a blender jar, add 1 cup of whole milk plain yogurt and 1 cup of water
  • Close the lid and blend the ingredients on high for 10 to 20 seconds on a blender

  • Warm the Milk – In a saucepan with medium heat, pour 2 cups of whole milk and allow it to warm up slightly. You can also heat the milk in a microwave for 1 minute
  • Add Lemon Juice – Remove from heat and transfer it to a bowl. Add 2 tbsp of lemon juice or vinegar to the warm milk and give a good mix
  • Rest the Milk – Close the bowl with a lid and rest it for 5 to 10 minutes. Now open the lid and the milk should have curdled now
  • Store or use it in Baking -The acid in the lemon juice or vinegar helps the milk to curdle and delivers a tangy flavor. This buttermilk substitute is especially used in baking recipes when the fresh drink is not handy to you. The acidic property reacts with baking soda which helps to deliver soft, and fluffy baking goodies

    Make sure to wash and dry all the fruit before adding it to your bowl. You can either keep all the berries whole or slice the strawberries, your choice. Add a pink or yellow grapefruit that’s been peeled and segmentedagain keeping the slices whole or chopping them in half.

    Why do we use it?

    It is a long established fact that a reader will be distracted by the readable content of a page when looking at its layout. The point of using Lorem Ipsum is that it has a more-or-less normal distribution of letters, as opposed to using ‘Content here, content here’, making it look like readable English.     My fav salads are loaded with toppings, full of flavor and filling. I don’t want to chew my way through lunch only to be left hungry and hour or two later. This Mediterranean Greek Salad recipe is both filling AND a flavor party. Plus it’s 100% plants.

    Feel free to use this salad as a refreshing lunch feature or a grand side dish for pizza night… you really can’t go wrong! Mediterranean cuisine always show cases veggies the right way, and that’s def true in this tasty salad.

    Mediterranean Greek Salad Recipe

    People who live in the Mediterranean live longer, healthier lives than many of the rest of the world. It’s considered a ‘blue zone’ and I want in on their secret! Since food seems to be a key component of this longevity lifestyle, I love incorporating Mediterranean-inspired recipes into my diet.

    My version of the Greek Salad includes washing + drying a few cups of mixed greens as the base. Then I top with a colorful array of chopped fresh veggies as well as kalamata olives and artichoke hearts (oh the flavor!).

    I often top this salad with fresh herbs like basil, oregano or mint… or all 3! Then I dress it with a simple olive oil + fresh lemon juice dressing. Since the olives and artichokes are brined, I taste the salad before adding additional sea salt, as to not over salt it.

    Pick your fav fresh herb (I suggest basil, mint or oregano) to chop and sprinkle. You can also add vegan or regular feta depending on what your body tolerates.

    Easy Ingredient Swaps

    If fresh tomatoes are hard to find then swap with ½ cup julienned or chopped sun-dried tomatoes. Chickpeas can be swapped with cannelloni beans, or you can omit altogether if using this salad as a side dish.

    I’m keeping the ‘dressing’ for this super simple salad recipe: olive oil, lemon juice, sea salt and fresh ground black pepper. That’s it! No need for a complex dressing as this salad’s already exploding with flavor.

    Honestly, the olives and artichoke hearts will bring a bit of salt from their brine, so you might want to taste this salad before adding salt… then add to taste.

    • Ginger – Ginger is also good source of anti-inflammatory and antioxidant properties and delivers a warm and spicy flavor
    • Orange and Lemon Juice – Gives the citrusy and natural sweet flavor to the drink
    • Black Pepper – Helps to absorb the curcumin from the turmeric
    • Honey or Maple Syrup – You can enjoy the shot as it is or you can also sweeten the drink with honey or maple syrup

    The recipe I have shared here is Turmeric Shots with ginger, lemon, and orange juice. I have also added crushed peppercorns which help to absorb the curcumin in the turmeric. The quantity yields up to 10 servings and it is usually enjoyed 1 to 2 ounces in shots glass. This is a non-alcoholic drink that can be enjoyed by adults and children.     • Chop the Turmeric– Wash the turmeric knobs in running water and pat them dry. Chop them into small pieces and reserve them for later use
    • Juice the Orange – Take 3 oranges and cut them in half. Squeeze the juice from the fruit using a handheld juicer and reserve them for later use. I have used fresh oranges here but you can also use 100% real fruit orange juice that is sugar-free
    • Juice the Lemon – Cut the three lemons in half and squeeze the juice from it
    • Blend the Ingredients Now in a blender jar, add the chopped turmeric, ginger, lemon juice, orange juice, and water. Close the lid and blend until everything turns smooth on a blender
    • Filter – Remove and filter the turmeric ginger mixture using a fine-mesh strainer. Make sure to mix well to extract the last drop of juice from the mixture

    Matcha is a type of green tea made from young tea leaves. Match tea leaves are specially grown to make this unique tea.     Water– to help dissolve the matcha powder and dilute the strong natural flavor of the tea.

    Matcha Powder– Be sure to chose premium culinary grade matcha or ceremonial grade matcha which has the best flavor.

    Pineapple Juice– Look for pineapple juice that has no added sugars. Make your own by pureeing fresh pineapple and straining it.

    Fresh Ginger- Peel the ginger before grating

    Honey- Honey or maple syrup will work well to sweeten the matcha tea latte

    • 1 ½ cups cold water

    • 2 tsp matcha powder

    • 1 ½ cups pineapple juice

    • tsp fresh grated ginger

    • 1 Tbsp honey

    • ½ cup canned coconut milk

    Directions

    • Place all of the ingredients, except for the ice, in a blender and puree until fully mixed.
    • Pour the pineapple matcha into two tall glasses and then top each with ice.
