Healthy Pasta Salad – Easy Lunch Recipe to Enjoy All Year Round

I have a hard time eating leftovers for lunch every day. Instead, I’m always on the hunt for easy yet tasty lunches that don’t take much prep work. I know that sounds like a unicorn, but it’s not! My healthy pasta salad checks all the boxes (and has a good amount of protein as well). Feel free to keep it a vegan pasta salad with the vegan feta or toss in your favorite cheese if you can tolerate it.

I set out to create this healthy pasta salad after Rawkstar Jennifer told me she was looking for quick and healthy recipes that her high schooler could take to school. I love how the different flavors mix in this recipe without meat or dairy.

Healthy Pasta Salad Recipe

Follow cooking directions on pasta package, allowing pasta to remain slightly undercooked. This will help keep the pasta from falling apart in the salad. Drain and rinse with cold water until pasta is completely cool, then drain well again.

While the pasta is cooling, mix all the Basic Vinaigrette ingredients together in a bowl until combined.

Place cooled pasta into a large bowl and add the vegetables and herbs. Gentle toss. Drizzle Basic Vinaigrette over the pasta salad and gently toss again. Cover and refrigerate until ready to serve.

If meal prepping, transfer the salad to airtight containers and store it in the refrigerator until ready to use.

While I created this healthy pasta salad with lunch in mind, it works great as a shareable side at a potluck or family meal as well.

Tips and Tricks to the Best Pasta Salad

Toss the salad well in the dressing as this helps it keep well in the fridge. Store in individual serving airtight containers to grab when you need to quickly. If you like your greens extra fresh, then wait to add those until you’re ready to eat, so they don’t wilt.

Ingredient Swaps

Probably my favorite part about this healthy pasta salad lunch is how much you can customize it to your taste preferences! Here are a few swaps I suggest if you want to try them:

Swap olive oil with avocado oil.

Swap red wine vinegar with the vinegar of your choice.

Use your preferred pasta type, or use gluten-free.

Cannellini beans can be swapped with another kind of legume (black beans, kidney beans or chickpeas are great swaps).

Add the veggies of your choice! Radisses or cucumbers are great additions.

Feel free to add nuts or seeds for an extra crunch.

I have a hard time eating the same thing over again, even when it’s as delicious as this vegan pasta salad. So you’ll find mine with a slight variation every time I make it, and that’s totally fine.

Basic Vinaigrette

  • ½ cup extra virgin olive oil
  • ¼ cup red wine vinegar (or vinegar of choice)
  • 1 . maple syrup
  • 2 test Dijon mustard
  • 1 clove garlic (finely minced)

  • 16 ounces dry pasta
  • 3 cups arugula (pre-washed)
  • 15th ounces canned cannelini beans (drained and well rinsed)

  • 1 can sliced ​​black olives
  • ½ cup sun-dried tomatoes (drained well if packed in oil) (julienned)

If you’re looking for a sweet and fruity mojito recipe, then my strawberry mojito mocktail is for you. Unlike its tangy cousin, this mojito recipe makes the most of juicy fresh strawberries. Sweet and summery, this delicious mocktail is the perfect choice for a warm day.

This mojito mocktail recipe is sweet and refreshing, making it an excellent choice for spring or summer.This virgin strawberry mojito is just as fun to make as it is to drink. Its:

  • Easy: With easy to find ingredients and a few simple tools, you’ll have your mojito mocktail in hand in no time!
  • healthy: fibre packed strawberries and vitamin C packed limes, this delicious drink s not just refreshing but good for you too!
  • Low in sugar: strawberries are the primary source of the sweetness of this mocktail. Use an all-natural, zero-carb sweetener such as monk fruit sweetener for a lower sugar and carb option. Note: you can use regular sugar or another sweetener if you prefer; just be mindful of the sugar content.
  • Easily adapted: my virgin strawberry mojito mocktail is easily adapted. Replace the plain soda with a lime or add your own twist with kombucha. This recipe also works well when batch made and served in a pitcher.


Traditionally, a mojito cocktail is made of white rum, lime juice, mint and sugar. The mint and lime are muddled with sugar to release the juice and flavours. Then, ice is added with rum and soda water.

This virgin strawberry mojito mocktail recipe is inspired by the original but omits the rum and uses healthier sugar alternatives. Strawberries, fresh mint, and lime juice are muddled together for a vibrant variation.

  • Glasses: Mojitos are traditionally served in a highball glass. If you don’t have them, don’t stress. The vibrant combination of strawberry, mint and lime mean your virgin strawberry mojito will look beautiful in any type of glass.
  • A muddler: that’s perfect if you have a normal muddler! If not, the back of a wooden spoon works too.
  • Pitcher or jug: just increase the quantities and muddle inside a jug if you want to make this for a crowd. To save time, pre-muddle the ingredients in the jug and simply add the soda water and ice when you’re ready to serve.

Strawberries: Fresh, in-season strawberries are my pick for this recipe. If they’re unavailable, frozen strawberries work just as well. Make sure to taw them before adding.

When you muddle the strawberries, try and get the strawberry pieces small enough to fit through a straw. You can use a blender if preferred.

Fresh mint: the menthol aromatics of fresh mint make this recipe pop. Don’t shred or chop it. Clapping it together in your hands and then gently muddling it is the secret to making the most of its flavour.

Lime juice: fresh lime juice is essential for this recipe. Avoid bottled if you can, it doesn’t deliver quite the same flavour.

Hint: Freeze fresh lime juice in ice cube trays to make the most of your limes.

Sweetener of choice: Simple syrup is the traditional choice for mojitos. My easy version swaps the syrup out for sugar. For a low sugar option, replace the sugar with a sweetener of your choice.

Soda water: plain club soda creates a fresh fizz however you can use the sparkling water of your choice.


For a citrusy tang, replace the plain soda with lime flavored soda water. Opt for a low or no sugar version. Kombucha is a naturally sweet replacement for soda water. Experiment with plain or flavored varieties until you find the perfect combination.

For a low sugar option, simply swap the sugar out with monkfruit sweetener to enjoy a refined sugar-free strawberry mojito mocktail. You can also use another sweetener of your choice but be sure to read the packet for any conversions.


Muddle strawberries and sugar (or monkfruit sweetener) in a glass to release the juices. Try and get the strawberry pieces small enough that they will fit through a straw. Use a blender in this step if preferred.

Add the lime juice and stir to combine.

Clap the mint together in your hands. You’ll know it’s worked when your hands smell minty! Then, add to the glass and muddle very gently a couple of times.

Fill the glass with ice and soda water. Garnish with extra strawberries, mint and lime.

If you can’t get your hands on fresh strawberries, you can also use frozen strawberries. Make sure to fully thaw them before use.

Today we want to tell you all about mango agua fresca. The main ingredient in mango agua fresca is mango! Fresh mango is chopped and pureed into a smooth, powerful juice. The mango juice is strained to remove any pulp and make the texture of the juice perfectly smooth.

To brighten the flavor of the mango, fresh lime juice is mixed in. This helps balance the sweetness of the juice with a little acidity. Mango lime agua fresca is incredibly delicious!

Water is mixed into the juice to lighten it a little. Pure mango juice is very sweet and thick. Water helps make the juice more palatable and more like “agua fresca” rather than just mango juice.

We add agave to our agua fresca de mango to enhance the sweetness of the fruit in a natural way. You can skip the agave or use honey instead. Give the mango agua fresca a sip and see if it needs to be sweeter or if it is just right!

While we love our mango lime agua fresca just as it is, there are a few things you can add in to make it even better. Here are a few ideas:

  1. Add a pinch of cayenne pepper to give the agua fresca some spice
  2. Add a splash of vanilla extract to make the drink richer
  3. Freeze the agua fresca in an ice cube tray and then blend the cubes to make a slushy
  4. Add another fruit like pineapple, watermelon, honeydew or coconut to add more complexity to the drink

  • 3 whole mangos

  • 5 cups water

  • 1 Tbsp lime juice

  • 2 Tbsp agave


  • Peel and cut the mangos. Place the mango chunks into a blender and puree until very smooth.
  • Pour the mango through a fine mesh strainer into a large bowl. Press the pulp into the strainer, extracting as much juice as possible.

Easy Recipe Swaps

Swap in one serving of your favorite plant protein powder for chia seeds. The cinnamon honestly makes this smoothie next level. Omit it if cinnamon isn’t your thing. While this is called an almond smoothie, there is no judgment if you use a different plant milk. Cashew or oat would work great!

If the natural sugar is a bit too much for you then swap out ½ of the banana for ¼ cup frozen cauliflower. Swap the 2 tbsps of almonds for the nut or seed of your choice.

Start your morning with a protein fueled breakfast all wrapped up in a perfectly sweet smoothie. This almond smoothie is delicious and an easy on-the-go beverage for a busy day.

  • 1 cup almond milk
  • 2 tbs almonds
  • 1 banana
  • ½ cup strawberries (frozen)
  • ½ test ground cinnamon
  • 1 test maple syrup (or honey)


  • Make sure to use a frozen fruit for a refreshingly cold smoothie
  • Add even more protein with 1 tablespoon of chia seeds or 1 serving of Protein Smoothie Boost
  • For less natural sugar, swap ½ banana with ¼ cup frozen cauliflower

Easy Cucumber Mocktails With Dill

These healthy cucumber mocktails have the perfect balance of cucumber, dill and lemon. This recipe is low sugar, vegan and super simple to make.

There really is something about these cucumber mocktails. They are the perfect color for Christmas, and you can find more Christmas mocktail recipes here. They are a great source of antioxidants and are rich in vitamin C, beta carotene and vitamin K. With the addition of hydrating soda water, this is one big glass of green goodness.

healthy: With a nutritious combination of cucumber, dill, citrus and soda, you can enjoy this virgin cocktail knowing it’s hydrating and so good for you.

Easy: With easy to find ingredients and minimal equipment, you can make this drink with little to no bartending expertise.

Fast: I love easy mocktail recipes that can be made quickly. This recipe can be made in just a few minutes and has minimal prep time.

Gorgeous to look at: just look at that stunning green colour. This non alcoholic cocktail looks perfect garnished with edible blooms and a cucumber flower garnish. If you love the look of this garnish, I’ve included a quick tutorial below. You can expand the screen by using the little square on the bottom right of the screen, if you need to.

To make the cucumber garnish: this is perfect for drinks and platters and would be perfect for Christmas mocktails too.

  • Cut a small piece of cucumber and use a sharp knife to create a hole in the middle.
  • Thinly slice about 10 pieces of cucumber using a knife or mandolin (I had better results with a mandolin.)
  • Lay them flat as shown in the video and roll as tightly as you can. Be careful – they are quite delicate!
  • Once you have rolled them together, insert one end into the cucumber base.
  • Fan out to form a flower shape.

These cucumber flowers can be made in advance and kept in the fridge for a few hours.

Ingredients You’ll Need For The RECIPE

Cucumber juice: You can buy cucumber juice at juice bars, or make your own. I just grated some cucumber and squeezed the juice through a strainer until I had the required amount. Tip: use the flesh in a smoothie to avoid wastage.

Fresh dill OR dill pickle juice: I used fresh dill in this mocktail, but I know this isn’t easily accessible for some. So I tested another variation with dill pickle juice instead. As in, juice from a jar of pickles. Trust me – if you are a pickle lover you will be pleasantly surprised!

lemon juice: I always use freshly squeezed lemon juice wherever possible, so I know exactly what is in it – plus, it just tastes better in my opinion. If you only have a bottled juice that’s fine too.

Sweetener of choice: I personally didn’t use a sweetener is this because I like the bite of the lemon juice and dill, but if you are a sweet tooth feel free to use some. You can use any you choose, my personal favorites are a couple of drops of Stevia or monk fruit sweetener.

Lime or regular soda water: I love the crispness of a lime soda water in this, so I recommend that if you have it! Any brand is fine, just opt ​​for low sugar where possible. If you do use regular soda water, you can even add an extra squeeze of lime or lemon juice at the end. Delicious!

How to make cucumber mocktails

Place dill, lemon juice and sweetener in a cocktail shaker and muddle for about 20-30 seconds. If you don’t have a shaker, use anything with a tight lid – I find a drink bottle or mason jar works well.

Add the cucumber juice and some ice and shake well. Double strain into an ice filled glass and top with your soda water of choice.

Stir gently and garnish. There are plenty of garnish options for this recipe. You could try my cucumber flowers above, edible flowers, a lime wedge or round and a sprig of dill. Completely your choice!

  • Stir gently, garnish and serve (if you want to make it special, you can find the cucumber flower garnish tutorial above).


Note 1: you can buy cucumber juice at juice bars or make your own. To make your own, grate some cucumber and squeeze it through a strainer until you have 1/4 cup.
Note 2: I used dill for my recipe, but also tested this with dill pickle juice in it’s place and it was delicious! If you are a pickle lover, just use the juice from a jar of dill pickles – sounds crazy but it is delicious and fresh!
Note 3: I didn’t need a sweetener with this, but if you are a sweet tooth, feel free to add some. My preferences are a teaspoon of monk fruit sweetener or a couple of drops of Stevia.

Sometimes you just need a fancy drink. Fortunately, this luxurious drink is easy to prepare. The whole mix comes together in about 5 minutes but gives you a cocktail that’s luxurious enough for a wedding, birthday, or any cocktail party you might be hosting.

It also doesn’t hurt that it’s loaded with interesting flavors and combinations of ingredients you probably never thought of.

So what exactly goes into our Amazon mocktail? The main ingredients are mint, apple juice, lemon juice and sparkling grape juice.

These are the ingredients you will taste the most when you take your first sip. Now, mint and lime are often paired together.

The bright flavors of the two ingredients are known to pair well. But add a little apple juice to the mix and you’ll be in for a whole new ball game.

The apple juice adds sweetness to the drink, making it easy to enjoy.

  • Place the mint leaves and simple syrup in the bottom of a cocktail shaker and mix the mint to release the juices and break the leaves apart a bit.
  • Add ice, apple juice, and lemon juice to a cocktail shaker, cover, and shake vigorously for about 30 seconds.

If you’re looking for an easy mocktail, you’ve found it. These simple virgin Christmas mimosas take just minutes to make and are perfect for a crowd.

We had 30 guests at our place a few weeks ago and one thing it taught me is that prep time is precious! Often so much attention is paid to the food that the drinks get forgotten about.

Ingredients you’ll need

You’ll need only 2 ingredients for this Christmas mocktail (plus a garnish), so they are cost effective as well as easy.

I used:

Non alcoholic sparkling wine – I recommend a dry wine if possible. The cranberry juice is very sweet, so a dry wine works better with it.

If you don’t drink alcohol free wine, you can replace it with soda water, kombucha or ginger beer – just be mindful the color will change if you use a ginger beer.

Cranberry juice – I used a low sugar cranberry juice, but I am not a sweet tooth! If you like it sweeter, a regular or diet juice works fine.

Something to garnish: I think rosemary works perfectly, but you could also use mint, cranberries or even cherries – anything green or red you have on hand!

How to make Christmas Mimosas

This method could not be easier.

Simply pour 2 parts alcohol free sparkling wine and 1 part cranberry juice into your glasses. The measurements don’t have to be exact and you can change the quantities to suit your taste and make it your own.
