Easy Cucumber Mocktails With Dill

These healthy cucumber mocktails have the perfect balance of cucumber, dill and lemon. This recipe is low sugar, vegan and super simple to make.

There really is something about these cucumber mocktails. They are the perfect color for Christmas, and you can find more Christmas mocktail recipes here. They are a great source of antioxidants and are rich in vitamin C, beta carotene and vitamin K. With the addition of hydrating soda water, this is one big glass of green goodness.

Easy: With easy to find ingredients and minimal equipment, you can make this drink with little to no bartending expertise.

Fast: I love easy mocktail recipes that can be made quickly. This recipe can be made in just a few minutes and has minimal prep time.

Gorgeous to look at: just look at that stunning green colour. This non alcoholic cocktail looks perfect garnished with edible blooms and a cucumber flower garnish. If you love the look of this garnish, I’ve included a quick tutorial below. You can expand the screen by using the little square on the bottom right of the screen, if you need to.

To make the cucumber garnish: this is perfect for drinks and platters and would be perfect for Christmas mocktails too.

  • Cut a small piece of cucumber and use a sharp knife to create a hole in the middle.
  • Thinly slice about 10 pieces of cucumber using a knife or mandolin (I had better results with a mandolin.)
  • Lay them flat as shown in the video and roll as tightly as you can. Be careful – they are quite delicate!
  • Once you have rolled them together, insert one end into the cucumber base.
  • Fan out to form a flower shape.

These cucumber flowers can be made in advance and kept in the fridge for a few hours.

Ingredients You’ll Need For The RECIPE

Cucumber juice: You can buy cucumber juice at juice bars, or make your own. I just grated some cucumber and squeezed the juice through a strainer until I had the required amount. Tip: use the flesh in a smoothie to avoid wastage.

Fresh dill OR dill pickle juice: I used fresh dill in this mocktail, but I know this isn’t easily accessible for some. So I tested another variation with dill pickle juice instead. As in, juice from a jar of pickles. Trust me – if you are a pickle lover you will be pleasantly surprised!

lemon juice: I always use freshly squeezed lemon juice wherever possible, so I know exactly what is in it – plus, it just tastes better in my opinion. If you only have a bottled juice that’s fine too.

Sweetener of choice: I personally didn’t use a sweetener is this because I like the bite of the lemon juice and dill, but if you are a sweet tooth feel free to use some. You can use any you choose, my personal favorites are a couple of drops of Stevia or monk fruit sweetener.

Lime or regular soda water: I love the crispness of a lime soda water in this, so I recommend that if you have it! Any brand is fine, just opt ​​for low sugar where possible. If you do use regular soda water, you can even add an extra squeeze of lime or lemon juice at the end. Delicious!

How to make cucumber mocktails

Place dill, lemon juice and sweetener in a cocktail shaker and muddle for about 20-30 seconds. If you don’t have a shaker, use anything with a tight lid – I find a drink bottle or mason jar works well.

Add the cucumber juice and some ice and shake well. Double strain into an ice filled glass and top with your soda water of choice.

Stir gently and garnish. There are plenty of garnish options for this recipe. You could try my cucumber flowers above, edible flowers, a lime wedge or round and a sprig of dill. Completely your choice!

Ingredients

  • 1/4 cup cucumber juice see note 1
  • 2 tsp dill or 1 tbsp dill pickle juice see note 2
  • 1 tbsp lemon juice
  • 1 tsp sweetener of choice see note 3
  • 2/3 cup lime or regular soda water

Instructions

  • Place dill, lemon juice and sweetener (if using) and muddle for about 20-30 seconds.

  • Add the cucumber juice, 2 or 3 cubes of ice, and shake well.

  • Double strain into an ice filled glass and top with your soda water of choice.

  • Stir gently, garnish and serve (if you want to make it special, you can find the cucumber flower garnish tutorial above).

Notes

Note 1: you can buy cucumber juice at juice bars or make your own. To make your own, grate some cucumber and squeeze it through a strainer until you have 1/4 cup.
Note 2: I used dill for my recipe, but also tested this with dill pickle juice in it’s place and it was delicious! If you are a pickle lover, just use the juice from a jar of dill pickles – sounds crazy but it is delicious and fresh!
Note 3: I didn’t need a sweetener with this, but if you are a sweet tooth, feel free to add some. My preferences are a teaspoon of monk fruit sweetener or a couple of drops of Stevia.
