ACA Welcomes 9 New Certified Pommeliers™ to the Ranks of Cider Experts
The American Cider Association is pleased to announce that nine people passed the Certified Pommelier™ exam taken in February at CiderCon® 2022 in Richmond, Virginia. Newly Certified Pommeliers™ are: Matthew Ostrander of Ibantik Craft Beverages (UT), Dan Schreffler of Space Time Mead and Cider Works (PA), Chase Rochon of Craft Curbside (ME), Jamie Pratt of Liberty Ciderworks (WA), Nicole Wheeler of Treehorn Cider (GA), Aaron Homoya of Ash & Elm Cider Co (IN), orchardists Kyle Degener from Holy Beez Orchard, (KY) and Roland Poirier (NY), and cider aficionado Bridget Fields (DC). This is the largest cohort of successful exams on both cider theory and evaluation of the four exams offered to date.
Cider is a beautifully nuanced beverage with a diverse set of elements that are often misunderstood by food and beverage professionals. Certifications are used in the professional realm to set oneself apart as an individual with specialized knowledge, though cider is often covered in a cursory manner by most certification programs, if at all. This led the American Cider Association to establish its Certified Cider Professional (CCP) program to educate those on the front-line of cider sales.
The Certified Cider Professional program began with a Level 1 certification to help people obtain a fundamental understanding of cider. The Certified Pommelier™ certification was developed to move beyond a fundamental understanding and to encourage cider professionals to think critically while demonstrating a higher understanding of the elements of cider. Preparation for the exam demands months, if not years, of study and practice evaluating cider.
“The Certified Pommelier™ exam is designed to be rigorous. says Michelle McGrath, Executive Director of the ACA. “However, accessibility remains important. We’re rolling out more and more study aids in 2022, with a book on the horizon.”
The next Certified Pommelier™ exam is planned for June 20, 2022 in Seattle, Washington, and the ACA will announce one more test opportunity before CiderCon® 2023 in Chicago, Illinois.

Why we Created This Event
It’s been to painful cancelling Juice Con twice in a row. We can’t bear to be apart from our juicing family any longer! This is meant to be a semi-local event, and if it goes well we will host future events in other parts of the country later (see more info below).
We will be planning future events in other parts of the country, and even internationally. Keep an eye out for a California event later this year, and a East Coast event after that.
Once travel resumes normalcy, we will likely be planning a few events internationally in the biggest juicing markets.
Today’s definitely recipe brings me back to my childhood. I grew up in an Irish-Polish family with a deep love for St. Patrick’s day. It’s probably why I’m all about pickles, horse radish sauce and sauerkraut. Today, I’m sharing my version of a childhood recipe, Roasted Cabbage Wedges.
This recipe is full of flavor thanks to the sauce, has incredible texture (especially when you blacken the edges) and is really good for you. I can’t wait for you to try it!
How to Roast a Head of Cabbage
I know many of you have a love/hate relationship with cabbage, and I don’t blame you! If you grew up on boiled, soggy cabbage, then you are missing out. This recipe is 100% crispy and comforting.
Cabbage is full of tightly layered leaves. Before you chop it and toss it into the oven, be sure to soak those wedges in a bowl of water for a few minutes to pull out any excess dirt.
Since I’m roasting on high heat, I want to use an oil that won’t burn. Avocado oil is a rich oil that is perfect for this recipe. You’ll use it in the sauce as well.
Bake until the outside is toasty. The cabbage edges should be browned. If you like a black char then feel free to broil for a few minutes just before removing (watching it closely!).
Picking the Right Cabbage
I use cannonball cabbage for this recipe. It roasts perfectly on the outside while turning tender in the middle. Yum! I find purple cabbage too thick for this recipe, yet if that’s what you’ve got on hand then go for it!

Seasoning Roasted Cabbage Wedges
While you can season your cabbage wedges however you want, I find my parsley sauce the perfect edition to this roasted dish. I also season with garlic, sea salt and pepper before roasting to enhance the natural flavors as well.
If spice isn’t your thing then just omit the red pepper flakes. You can even keep them in a side dish for anyone who wants to add some to their individual portion.

What is a healthy way to eat cabbage?
My roasted cabbage recipe is a great way to incorporate delicious cabbage into your diet. It’s made with real ingredients and no weird additives. You can use less healthy fat than I do with the avocado oil, and spice it exactly how you want it.
How do you make cabbage more tender?
I use a brush when adding avocado oil to cabbage before roasting it. This allows for better coverage between the tight leaves and results in a crispy on the outside, tender on the inside dish.
How do you cut a head of cabbage?
I use a large knife with a pointed end. That way I can seamlessly slice through the head of cabbage (on a cutting board, of course!) without having to hack at it. Start with the cabbage on its side, meaning the core is facing you and not touching the cutting board. Slice in half, cutting through the core. Once you’ve halved the cabbage, you can more easily cut it into wedges. I leave the core in when roasting cabbage to help keep the leaves all together. It’s easy to remove once you’re ready to serve it.

I grew up on roasted cabbage so it’s a staple in my St. Patrick’s Day celebrations with my family. Enjoy this simple yet comforting recipe and start a plant based tradition with your family, too!
1green cabbage head(large)
4.avocado oil(plus more for baking sheet)
¼testfreshly ground black pepper
1cupfresh parsley(finely chopped)
1lemon(freshly juiced and zested)
¼testred pepper flakes
Preheat oven to 400° F. Line rimmed baking sheet with parchment. Drizzle a little avocado oil over the parchment.
Prepare the cabbage by peeling away any yellowed or dry outer leaves. Cut the cabbage in half, leaving the core intact. Cut each half into 1-inch thick wedges.
Place wedges in a large bowl of cool water and allow to soak for 3-5 minutes to remove excess dirt. Pat dry with a clean dish towel.
In a small bowl, stir Together 2 teaspoons of minced garlic with 2 tablespoons avocado oil, ½ teaspoon sea salt and black pepper. Drizzle or brush the garlic oil over the cabbage, making sure some get in between the layers.
Place the baking sheet into the oven. Roast 25-30 minutes, or until toasty looking and tender. While the wedges are roasting, prepare the parsley sauce.
In a bowl, stir together lemon zest and juice with the remaining 2 tablespoon avocado oil, 1 teaspoon garlic, ½ teaspoon sea salt, red pepper flakes and paprika. Add the chopped parsley. Cover and set aside until ready to serve.
to serve, transfer the cabbage wedges to a serving platter and drizzle with some of the parsley sauce. Serve immediately.
Leaving the core intact while baking helps prevent the wedges from falling apart before you’re ready to serve them.
I recommend using cannonball cabbage (the green head you typically see at the grocery store) in this recipe for the best results.
Avocado oil works great since it has a high heat point, yet you can swap with coconut oil or olive oil if needed.

EQUIPMENT YOU’LL NEED
Baking sheets: regular cookie sheets or baking trays work well.
Parchment paper: Also known as baking paper, helps to stop your citrus wheels from sticking to the baking sheet and allows for an easy flip at the halfway point.
Wire racks: A non-stick wire rack can be used as an alternative for a baking tray and paper if you run out of trays or don’t have any on hand.
Mandolin slicer or sharp knife: A nice even cut will give your dried orange slices a professional look. A mandolin slicer will allow for a more uniform look, however a sharp knife and steady hand works just as well.
paper towel: patting down your citrus slices before you bake speeds up the dehydration process. Have a few sheets on hand in case your fruit is extra juicy.
HOW TO DEHYDRATE ORANGES IN THE OVEN
If you’ve ever wondered how to dry oranges in the oven, you might be surprised at just how easy it is. Simply:
Preheat your oven to 70ºC (160ºF), or as low as your oven will go.
Cut the citrus into 6mm / ¼ inch slices. If you have a mandolin, it will make this task much easier. If not, use a sharp knife and cut as evenly as you can.
Line a baking sheet with parchment/baking paper. You could also use a wire rack – just make sure it’s non-stick.
Place the citrus wheels in a single layer on top of the cookie tray, about 1 centimetre/ half inch apart.
Blot with paper towel to remove the excess moisture. Turn and blot the other side.
Bake for 2 hours then flip the orange wheels. Return to the oven and bake for another 2 hours, then check. If any moisture remains, leave them in a little longer.
Only remove from the oven when all moisture is removed, and they are completely dry.
Once cooled, store the dried orange slices in a zip lock bag in a container until you’re ready to use them.

Yes, you can dry orange slices in the microwave. Slice the fresh oranges. Place them on a microwave-safe dish lined with 5 sheets of paper towel. Add 5 more sheets of paper towel on top. Set the microwave to defrost and cook for 7 minutes. Place the rack cooked orange slices on a wire whilst you replace the paper towel with fresh sheets. Place the orange slices on the fresh paper towel and microwave them on defrost for a further 5 minutes. Remove the orange slices and check them. If they look jelly-like, they’re ready. If not, turn them over and continue to cook them on defrost in 2-minute intervals until they are. Lay the jelly-like orange slices on a wire rack until they are firm.
How long do dried orange slices last?
So long as the orange slices are fully dried before storing, they can last between 6-12 months. Store the dried orange wheels in a zip lock bag inside an airtight container for best results.
Can you dry orange slices in an air fryer?
There’s not much that an air fryer can’t do. Orange slices are perfect for dehydrating in this versatile appliance. Arrange the citrus slices in your air fryer basket without allowing them to overlap. Then, set your air fryer to its lowest temperature and cook for 30 minutes. After 30 minutes, flip the oranges and return them to the air fryer for another 20 minutes. If they’re not fully dried after 20 minutes, continue to cook them in 2-minute intervals until fully dry.
Once ready, place the dried fruit on wire racks to cool.

For once, I’m trying to be prepared and ahead of the game. When this goes live, I’ll hopefully be traveling with The Tall One. We need a bit of respite. But between this moment and that anticipated one there are snow storms and cross-country flights. I write in hope because I prefer it to other available options. Fingers crossed, cider friends!
Today, I’m sharing my thoughts on Virtue Cider’s Baldwin. For those who aren’t familiar with Virtue Cider. The company was founded in Michigan in 2011 by Greg Hall. The cidery offers many different cider styles, many of which are inspired by different cider making traditions from cider regions of the world or local Michigan ingredients.

Here’s the official description for the Baldwin, “Part of our Apple Fest Series which features a single apple varietal. The Baldwin apple is a large crimson red and coppery green apple that is crisp, juicy, and aromatic with a spicy sweet-tart flavor.” This cider’s ABV is 7.7%.
Appearance: bubbly, brilliant, medium straw
Virtue Cider’s Baldwin reminds me of many modern American ciders in its appearance. The cider is brilliant with visible bubbles and a medium color intensity. The hue reminds me of ripe straw.
Aromas: Cooked apples, apple skin, Pixi Stix
The Baldwin reminds me most of cooked apples when I let its aroma notes waft to me. I can get other inklings as well: green apple skins, Pixy Stix, and grapefruit.
This cider is neither dominated by sweetness nor completely reliant on it. There is enough sweetness to keep things easy-going and approachable and not a bit too much. What sweetness I do detect is very appley and natural.
Flavors and drinking experience: tart, minerals, high acid, well-balanced
I appreciate how this tart and minerally cider feels so fresh on the palate. It really does feel so green apple tart to me; it’s somehow high acid without being overly austere or pointed. The Baldwin is a well-balanced crowd pleaser of a cider. I enjoy the strong bubbles and medium full mouthfeel.
I had this at a lovely quiet dinner of pescatarian okonomiyaki, dumpling soup, and cucumber salad. What a set of pairings! Each dish brought out a different element of the cider, and all were delicious. I would enthusiastically recommend exactly this to anyone who wants to explore such a well-balanced cider in all its visissitudes. And my eternal gratitude to my dear friends who cook so well and share their gifts.
